Tuesday Lunch

For lunch today, I ate the leftover tortillas from last night with a wonderful rice recipe I got from my mom-in-law:

Cheesy Spanish Rice

2 C. hot cooked rice
1 C. Monterey Jack Cheese
1 C. sour cream
1 4 oz can chopped green chilis
salt to taste

Mix all together. Add sour cream if you like it creamier, and heat if the cheese isn't all melted.

Hi -- I followed you over here because I absolutely LOVE how you spell your name! Finally someone else has it right!

Now that cheesey rice thing sounds great, however my husband won't eat anything green but loves stuff with a real bite to it.

Would sauted onions and garlic work? I want to cook something that will stink the house up good enough for him to get hungry and then he'll forget about what it is the actual meal ;)

Please tell me what to substitute because I really want to know.

And I am following you first, because you always remember your first!

So, what can I add to updo the rice but keep the entire meal beige?
